Gluten-free Vegan Chocolate Chia and Sesame Bites (Super Pasteli/ Παστέλι)

This 'Pasteli' recipe is an adaptation of the traditional 'Pasteli ' with additional superfoods like chia seeds, dark chocolate and Yacon powder (optional but recommended). They are the perfect go to healthy snack!

INGREDIENTS.

  • 65g sesame seeds

  • 60g chia seeds

  • 40g almonds, roughly chopped (or seeds for nut free)

  • 50g quality dark chocolate at 75% cacao, chips or a bar roughly chopped.

  • 4 Tbsp Greek honey (or maple syrup for vegan)

  • 1 Tbsp Yacon powder (optional)

METHOD.

  1. Prepare a sheet of baking paper on a tray and put aside for later.

  2. Put the sesame seeds, chia seeds and nuts (or seeds) into a large frying pan and lightly toast til they're a light golden colour, then remove from heat.

  3. Pour the honey (or maple syrup) into the pan and coat all the sesame seeds and nuts. 

  4. Drop in the choclate chips and rougly stir til melted. I half mixed it so it would have a marbled effect.

  5. Sprinkle in the Yacon powder and again mix to combine. It will be thick and sticky.

  6. Use a spatula to scrape out onto the baking paper and flatten a bit to form a rectangular shape.

  7. Lay another piece of baking paper on top and use a rolling pin to level the surface.

  8. Cut into small squares while still soft then allow to cool at room temperature or in the friedge. 


Storage:


  • They can be stored in an air tight container at room temperature but better in the fridge up to 2 weeks.

Yacon powder - high in potassium and antioxidants, the yacon root is considered the world’s richest natural source of fructooligosaccharides (FOS) which is an excellent pre-biotic booster for the digestive system. Yacon feeds your good bacteria! (Source)
