Gluten-free Greek Yoghurt Baklava Banana Bread



Whether you are gluten-free or not, this refined sugar-free banana bread recipe is delicious and  packed with good for you ingredients.

Made with both Greek yoghurt and Greek extra virgin olive oil, the sponge is moist and bouncy, with a crunchy baklava topping, you'll want to go in for seconds!

  • 140g brown teff flour (I use Shipton Mill brown teff flour)

  • 80g tapioca flour/starch

  • 1½ tsp bicarbonate soda

  • ½ tsp fine sea salt

  • 2 tsp cinnamon

  • ¼ tsp ground cloves


  • 3 large bananas

  • 1 large egg, organic

  • 80g plain Greek yoghurt (sub coconut or soy yoghurt for dairy free)

  • 80g Greek honey (or maple syrup)

  • 2 Tbsp Greek olive oil

  • 1 tsp vanilla extract/paste/powder

For the baklava topping:

  • 25g almonds, chopped into small pieces

  • 25g walnuts, chopped into small pieces

  • 2 Tbsp raw buckwheat seeds

  • ½ tsp ground cinnamon

  • 1 Tbsp coconut sugar

  • 1 Tbsp Greek honey, (or maple syrup) to drizzle


  1. Preheat the oven to 180ºC and line a loaf tin with baking paper.

  2. In a large bowl mix all the dry ingredients, and make a well in the centre.

  3. In another bowl mash all the bananas with a fork, and add in all the wet ingredients.

  4. Carefully pour the wet ingredients into the bowl with the dry ingredients, and mix well with a silicone spatula.

  5. Pour the mixture into the loaf tin, sprinkle the nuts and sugar evenly on top and lastly drizzle with honey.

  6. Bake in the middle of the oven for 55 minutes (check if it’s done by sticking a thin knife inside – if it comes out clean, the cake is ready).

  7. Once baked, place it onto a cooling rack for 10 minutes, and then take it out of the tin and place it back on the rack until cooled completely.

Teff flour - is naturally gluten-free, high in dietary fibre, rich in iron and has a lower glycemic index than wheat products. Teff is particularly high in lysine, an amino acid which is essential for the production of proteins, hormones, enzymes, collagen, and elastin, lysine also supports calcium absorption, energy production, and immune function. Bananas - contain many essential nutrients, fibre, antioxidants and provide benefits for digestion and heart health. (Source)

Walnuts - rich source of monounsaturated fats, protein, Omega-3 fatty acids, Vitamin E and a good source of Manganese, Copper, Molybdenum and the B vitamin Biotin. (Source)

Greek yoghurt - is a great source of protein, calcium, and packed with probiotics which are healthy bacteria that can help boost your immune system and decrease stomach issues. (Source)

Greek honey - is nutritionally dense and filled with vitamins, minerals and antioxidants. (Source)

Greek extra virgin olive oil - specifically Greek oil, has the lowest acidity (approximately 0.5%) and is packed with essential vitamins and minerals. Benefits may include anti-inflammatory properties, lowering cholesterol and blood pressure and improves bone calcification. (Source)

Ceylon (True) Cinnamon - is loaded with powerful antioxidants and anti-inflammatory properties.  (Source)

Cloves - are best known as a sweet and aromatic spice which are rich in antioxidants and a source of manganese. (Source)
