Gluten-free Creamy Greek Rice Pudding with Cinnamon (Rizogalo / Ρυζόγαλο)

'Rizogalo' is a Greek rice pudding, and this is my mothers recipe.
She would make a big batch and we'd eat it at room temperature or cold from the fridge. It's decadent, creamy and silky smooth infused with lemon peel and best sprinkled with cinnamon for an authentic Greek taste!
Rice pudding can be enjoyed all year round but especially comforting as an autumnal breakfast. This recipe easily doubles up for bigger batches and you can also use orange peel for another recipe variation.
1 litre whole milk
100g arborio rice
50g brown cane sugar (or coconut sugar)
Peel of half lemon, or orange
1 cinnamon stick
¼ tsp sea salt
1 Tbsp cornflour
100ml cold water (or milk)
In a large saucepan, pour in the milk, lemon rinds, salt and rice, and bring to the boil. You must keep stirring throughout the process to avoid the bottom from sticking and burning.
When it has reached a boil, reduce heat to low and keep stirring until it begins to thicken, approx 20minutes
Add in the sugar and cream, and again continue stirring until the rice is cooked to desired texture.
In a small bowl add the cornflour and 100ml cold water and mix to combine.
Add the cornflour mixture to the rice and stir in well. The rice pudding will begin to thicken so keep stirring until desired consistency.
When ready, remove the lemon rind and cinnamon stick and use a ladel to pour the rice pudding equally into the bowls.
Then give a good dusting of cinnamon over the tops.
Enjoy hot or cold, but allow to cool at room temp before placing in the fridge.
These will keep in the fridge for up to 5 days.

A dusting of ground cinnamon
